Cookie dough
- 1 cup 2 sticks unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/4 cup confectioners' sugar sifted
- 1/2 teaspoon kosher salt heaping
- 2 large egg yolks at room temperature
- 1/2 teaspoon pure vanilla extract
- 2 cups all-purpose flour
Streusel Topping
- 3 tablespoons unsalted butter
- 1/2 cup all-purpose flour
- 1/4 cup light brown sugar
- 1 tablespoon granulated sugar
- 1/4 teaspoon kosher salt heaping
- 1/8 teaspoon ground cinnamon
