Chocolate Mochi Brownies (Rice, Rice, Brownie)

Mochi Ado about Something.  I tried quite a few mochi recipes this year so it seems fitting that 2021 should end on a sweet rice note.  2021, the year of Mochi muffins, donuts, and now, brownies.  Mochi brownies are delicious!  I found quite a few recipes that were fairly similar and picked one from Kirbie’s Cravings as my starting point.  There are a plethora of recipes out there including one from Fix, Feast, Flair whose cookbook I have and love, Aloha Kitchen.

The Mochi Brownies are not too sweet, have that hallmark stretchy, elastic texture of mochi, intensely chocolate, and just darn delicious.  If you like fudgy, chocolatey brownies, you are going to love these.  Bonus, they’re GLUTEN-FREE and super easy to make.  We are talking spoon, whisk, 2-bowl, done.

Cast of Mochi Characters

Mochi– Sweet Rice Flour aka Glutinous Rice Flour.  NOT to be confused with rice flour.  Go-to brand,  Koda Farms Mochiko Sweet Rice Flour.  Found in most big supermarkets, all Asian Markets and online for an arm and a leg 🤷🏻‍♀️. Bob’s Red Mill also has a Glutinous Rice Flour that can be used.

Cocoa-You can use any kind of cocoa powder in this recipe, natural or dutch-processed.  The Dutch-process cocoa will give you a deeper, darker brownie color.  King Arthur carries both types.  Hershey’s is natural cocoa.

Baking Powder vs. Baking Soda- I used baking powder. I’m not sure it makes a difference.  My logic, since I used  Dutch-processed cocoa which has a neutral pH, I did not have an acid to kick start baking soda.  Baking powder needs heat to activate it not acid.  If you use natural cocoa you could use either baking powder or baking soda.

Liquid- I used whole milk, I haven’t tried it but I’m thinking this recipe would work with milk substitutes, evaporated milk, or coconut milk.  It may change the texture a little.

Chocolate-The brownies are not too sweet and pretty chocolate-y.  Try different chocolates to sprinkle on top, milk chocolate or semi-sweet, chopped from bar form.  Chips don’t melt well and don’t look as nifty as shards of chocolate.  I hit the top at the end with my secret sprinkles, a mix of Maldon Salt, Demerara Sugar and Chocolate Sprinkles.  For a festive look, you can use multi-colored sprinkles!

The Setting: Two Bowls, One Spoon, One Whisk

Literally, the ingredient list is the hard part of this recipe.  Combine the dry ingredients in one bowl and the liquids in another, then add the dry to the wet, mix with a spoon or whisk, bada bing bada-boom, done.  No need to worry about overmixing as Mochiko flour doesn’t have gluten.  The batter will be like a runny pancake batter.  Pour batter into your parchment-lined pan and bake.  That’s it!  An hour later you’re pulling mochi brownies out of the oven.  Cool completely before cutting with a sharp knife.  If it sticks put a little oil or butter on your knife.

Chocolate Mochi Brownies

A gluten-free alternative that is so good you may never go back to traditional brownies!

Ingredients

  • 1 cup mochiko flour
  • 1/2 cup unsweetened cocoa powder Dutch-processed or Natural is fine. Dutch process will give you a deeper, dark brown color
  • 1/2 tsp Instant espresso powder Optional, highlights chocolate flavor
  • 1 cup granulated white sugar
  • 1 ½ tsp baking powder you could actually use baking soda in equal volume, if using natural cocoa which is acidic and will activate the baking soda
  • 5 tbsp unsalted butter melted If you use low fat milk or milk substitute increase butter to 6 T
  • 2 large eggs
  • 12 oz whole milk
  • 1 tsp vanilla
  • 3 tbsp chopped dark chocolate sweeter brownie, use milk chcolate or semi-sweet chocolate
  • Sprinkles! optional but festive!

Instructions

  • Preheat the oven to 350°F. Line an 8 by 8-inch baking pan with parchment paper.
  • In a medium bowl, add mochiko, cocoa powder, sugar and baking powder and espresso powder (optional). Whisk together until evenly mixed.
  • In a large bowl, add melted butter, eggs, milk, and vanilla extract. Whisk until evenly combined and no egg streaks remain. Add in dry ingredients. Mix until blended.
  • Pour batter into prepared baking pan. Sprinkle surface with chopped chocolate.
  • Bake 60 minutes or until mochi is set, there should be no jiggle. A toothpick inserted should come out mostly clean. Remove from oven and top with sprinkles. Cool completely before cutting.

Notes

You can replace whole milk with other milk substitutes. Keep in mind that different milk substitutes may change the texture of the brownies.
Don't even try to cut the brownies before they cool completely!
Store in a sealed container at room temperature for up to 2-3 days.
If you want to make sure you have a nice layer of sprinkles, sprinkle brownies before baking.  Sprinkle flaky salt and sugar when the brownies come out of the oven.

Mint to be-Frango Brownies

The other morning I met a friend I hadn’t seen in a while for coffee. Thanksgiving had us talking about the holidays.  We caught up on the kids’ comings and goings, where everyone was spending the holidays, and which kids would be home.

Of course, the conversation ultimately drifted to food. She mentioned ordering boxes of Frango Mints from Macy’s. FRANGO MINTS?! My eyes automatically glazed over.  Frango Mints, ooohhhh, love Frango Mints.  Back in the day whenever I was in Chicago, my to-do list included a stop at Marshall Field’s explicitly to buy Frango Chocolates.  Delightful bites of satiny smooth chocolate flavored with mint, raspberry, or caramel.

Much to the chagrin of Chicagoans, Marshall Field’s was sold to The Federated Group, but for the rest of us, it meant those luscious chocolate morsels can now be found at Macy’s everywhere.  I know, it is not the same as Marshall Field’s on State Street, sigh.  But time marches on.

Doing the Frango Tango

Frango Mints straight out of the box are delectable, but those little bad boys elevate your standard brownie to a new level. Years ago, the Chicago Tribune printed a recipe for a Frango Mint Brownie. They are easy to make, and delicious with that minty twist that sets them apart.  It does help to have a mixer since the recipe calls for whipping the eggs to a nice thick, foamy batter.  There are no leaveners, so the egg mixture accounts for any lift in the batter.  Add the melted chocolate, and fold in the flour, nuts, and chopped Frango mints. Bake. The brownies are ready when a toothpick stuck halfway between the edge and the center comes out fairly clean or just a few crumbs.  Somewhere between fudgy and cakey, these brownies are just right.

With a promise to send my friend the recipe, I hustled home to make a batch of these long-forgotten gems.  Well, I did have to make a stop before heading home. Lucky for me Macy’s is just a few minutes away. Had to get my signature green box of Frango Mints. (Yikes-Cyber Monday deal 9.99/box!)

Shhhh…I shouldn’t be writing this, but in a pinch, if you don’t have Frango Mints, you could use Andes Mints.

FRANGO MINT BROWNIES

Ingredients

  • 2 ounces baking chocolate chopped
  • 1/2 cup (1 cube of butter) cut into pieces
  • 2 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/8 teaspoon salt
  • 1/2 cup pecans chopped
  • 1/2 cup Field`s Frango Mints chopped

Instructions

  • Heat oven to 350 degrees. Butter an 8 inch square baking pan.
  • Melt butter in medium saucepan or in microwave. Add chocolate and stir to melt until chocolate is completely melted.
  • Beat eggs with an electric mixer until thick and lemon colored (~2 min)
  • Gradually add the sugar to the eggs, beating thoroughly (additional 1 min) until the batter is smooth and light.
  • Stir in the chocolate mixture and vanilla.
  • Fold in flour and salt into the batter with rubber spatula.
  • Fold in the pecans and chopped Frangos.
  • Pour brownie mixture into a well-greased, 8-inch-square pan.
  • Bake until the top is shiny and a crust has formed, 20 to 25 minutes. Avoid overbaking.
  • Bake until wooden toothpick inserted halfway between edge and center comes out with on a moist crumb.
  • Cool on wire rack. Cut into 16 2x2 pieces.
  • Store in an airtight container.
  • Allow to cool completely, then cut into 2-inch squares.

Chili, Brownies & Friends

At the risk of losing any credibility I might have earned with previous posts, yes, that is The Friends Cookbook in the photo.  I told you, I have a cookbook addiction, this proves it.  In my defense I did peruse the book before buying, first I noticed the cast of Friends did not write this cookbook, lol (not even Monica), it was actually written by a senior writer for Cooks Illustrated, the bastion of obsessive recipe testing.  Second, it was on sale…so what the heck, I took a chance and bought a copy.

I kid you not, it has been my go to source for a variety of recipes, pancakes, brownies, coffeecake and yes, chili.  The recipes are fairly simple, delicious and KID FRIENDLY, a prerequisite for the last 20 years of my life.  Here are 2 favorites from the book, Flirting with Firemen Chili and the link to Absolutely Best Brownies,  Kid tested and approved.

Firehouse Chili

Kid friendly chili!

Servings 8 -10 servings

Ingredients

  • 3 T vegetable oil
  • 3 medium yellow onions chopped
  • 1 green bell pepper chopped
  • 3 medium cloves of garlic minced
  • 1.5 pounds ground beef I use a mix of beef and ground turkey or chicken 2:1
  • 2 cups canned crushed tomatoes I use a 15 oz can of fire roasted diced tomatoes
  • 1 15 ounce can of beef broth
  • 3 T chili powder
  • 1.5 t cumin
  • 1/2 t oregano
  • 1 t salt
  • 1 15 ounce can of kidney beans or pinto beans or black beans drained and rinsed

Instructions

  • Heat oil in large pot. Add the onions and saute over med heat until soft and transparent looking about 8 minutes. Add garlic and bell pepper and saute for additional 2-3 minutes. Stir in ground beef and cook until it loses pink color. Cook for about 4-5 minutes, breaking up the beef with a fork or spoon. Add tomatoes, broth, spices and salt. Bring to a boil, reduce heat and simmer for approximately 2 hours until chili thickens a little. Add beans. Ladle into bowls, garnish with shredded cheese and green onions.
  • I add corn (frozen is fine) 1-2 cups because what kid doesn't like corn and to spice it up I will add hot sauce like Cholula which is a little sweeter than Tabasco.
